The Best Potato Soup You've Never Had

The perfect, most full bodied potato soup that actually has substance to it and satisfies in a way that potato water cannot.

Ingredients

  • 4 cup potato chopped
  • 4 cup water
  • cup milk
  • ½ cup butter
  • tsp salt
  • ½ tsp pepper

Optional Toppings

  • cheese shredded
  • sour cream
  • bacon cooked crispy and crumbled
  • chives

Instructions

  • Peel, wash, and chop the potatoes.
  • Add chopped potatoes and 4 cups water to a large pot.
  • Cover and bring to a boil over medium high heat. Continue to boil for 30 minutes.
  • Once the 30 minutes are up, do NOT drain water that is remaining. Add milk, butter, salt, and pepper.
  • Using an emulsion blender (like this one), blend the soup into creamy deliciousness.
  • Spoon into a bowl and top with your favorite toppings and devour!

Notes

This makes a very full bodied soup. Well capable of supporting your favorite toppings and satiating appetites. If you desire it to be a little more "watered down" though, simply add a bit more milk. My family loves it just as it is though!
