Homemade Sausage Gravy

- ½ lb mild breakfast sausage
- 4 Tbsp reserved sausage grease or oil
- ½ cup flour
- 2¾ cup milk
- ½ tsp salt
- ¼ tsp ground black pepper
Brown the breakfast sausage in a skillet.
Drain the sausage grease and measure 4 Tbsp into a medium saucepan. Add oil if needed.
Heat the grease over medium heat and whisk the flour in and continue to whisk for a minute to cook the flour a bit.
Add 3/4 cup of the milk to the flour mixture and whisk briskly until all lumps are gone. Then, whisk the rest of the milk in.
Continue to whisk the gravy over medium heat until it starts to thicken, 3-5 minutes.
Once the gravy starts to thicken, remove from heat and whisk in the salt, pepper, and sausage. Add more salt and pepper if needed per your taste.
