Forget-Me-Not Biscuits

In memory of my beloved Grandmother. Biscuits for any occasion, especially family breakfast.

Ingredients

  • 2 cup flour
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1 Tbsp sugar
  • 1/3 cup shortening
  • 1 cup milk

Instructions

  • Preheat oven to 425°
  • In a medium bowl, mix all the dry ingredients together well.
  • Add in the shortening and crumb it together with the flour mixture.
  • Add the milk and stir until just combined.
  • Flour a workbench and drop out biscuit mixture on it. Sprinkle flour over the dough and then knead a few times, sprinkling more flour as needed, until it is soft and not overly sticky anymore. Don't overwork the dough.
  • Lightly flour workbench again and press dough out gently to about 3/8" thick.
  • Dip the top of a glass into flour and then cut out dough circles with it. Place the dough circles onto an ungreased cookie sheet.
  • Re-form the remainder of the dough and press out flat again. Cut more dough circles out. Repeat until all the dough has been used up. Should be about 10 dough circles total.
  • Bake for 13-15 minutes until the biscuits have raised and the tops are light golden.
  • You can brush some butter over the tops of these as soon as they come out of the oven if you like! Enjoy!

Notes

These are perfect for breakfast, as an accompaniment to dinner, or the dough can even be used in things like Chicken 'n Dumplings. Adding some shredded cheese while mixing and then topping with Awesome Garlic Butter when they come out of the oven can result in delicious cheesy garlic biscuits.
