Easy Pork Shish Kebabs

Ingredients

  • 1 pork loin
  • 1 red onion quartered
  • 1 can pineapple chunks drained
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1-1/2 Tbsp soy sauce
  • 1/2 cup Apricot preserves
  • salt and pepper to taste
  • oil
  • 8 skewers

Instructions

  • Soak skewers in water.
  • Cut pork tenderloin into 1/2" cubes. Toss with a bit of oil, salt, and pepper.
  • Prep the onions, drain the pineapple, and cut the bell peppers into large chunks. Place each ingredient into a bowl and toss each with a bit of oil, salt, and pepper.
  • In a separate bowl, mix the soy sauce and apricot preserves together and place to the side.
  • Start assembling shish kebabs, alternating between all the ingredients to form a pattern.
  • Grill on medium high heat, turning every several minutes, until the pork is cooked through and the veggies have become tender, about 15-20 minutes. Brush on soy sauce mixture, coating well, towards the end of cooking (about the last 5 minutes).
  • Enjoy! I like to serve these with a bed of rice, either buttered or fried!
