Easy Pork Shish Kebabs

- 1 pork loin
- 1 red onion quartered
- 1 can pineapple chunks drained
- 1 red bell pepper
- 1 yellow bell pepper
- 1-1/2 Tbsp soy sauce
- 1/2 cup Apricot preserves
- salt and pepper to taste

- 8 skewers
Soak skewers in water.
Cut pork tenderloin into 1/2" cubes. Toss with a bit of oil, salt, and pepper.
Prep the onions, drain the pineapple, and cut the bell peppers into large chunks. Place each ingredient into a bowl and toss each with a bit of oil, salt, and pepper.
In a separate bowl, mix the soy sauce and apricot preserves together and place to the side.
Start assembling shish kebabs, alternating between all the ingredients to form a pattern.
Grill on medium high heat, turning every several minutes, until the pork is cooked through and the veggies have become tender, about 15-20 minutes. Brush on soy sauce mixture, coating well, towards the end of cooking (about the last 5 minutes).
Enjoy! I like to serve these with a bed of rice, either buttered or fried!
