Easy Banana Bread

Perfect way to use up those overripe bananas on the counter!

Ingredients

  • 2-3 medium overripe bananas
  • 2 eggs
  • cup flour
  • 1 cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • chocolate chips optional

Instructions

  • Preheat oven to 350°
  • Peel the bananas and put them in a medium sized mixing bowl. Add the eggs.
  • Using a hand mixer, mix the bananas and eggs on high speed for a couple minutes into a creamy paste.
  • Dump the flour, sugar, baking powder, baking soda, and salt all on top of the banana mixture and then mix on medium speed to combine well.
  • Spray a loaf pan with cooking spray and then dump in the banana mixture. If you want chocolate chips on the top, sprinkle them on now.
  • Bake for 40-45 minutes until a toothpick inserted into the center of the loaf comes out clean.
  • Enjoy warm with butter or just a room temp slice anytime!

Notes

If you want to make 2 mini loafs instead of one big loaf, separate the mixture between 2 greased mini loaf pans and reduce cooking time to 30-35 minutes.
