Ingredients
2-3medium overripe bananas
2eggs
1¼cupflour
1cupsugar
2tspbaking powder
½tspbaking soda
¼tspsalt
chocolate chipsoptional
Instructions
Preheat oven to 350°
Peel the bananas and put them in a medium sized mixing bowl. Add the eggs.
Using a hand mixer, mix the bananas and eggs on high speed for a couple minutes into a creamy paste.
Dump the flour, sugar, baking powder, baking soda, and salt all on top of the banana mixture and then mix on medium speed to combine well.
Spray a loaf pan with cooking spray and then dump in the banana mixture. If you want chocolate chips on the top, sprinkle them on now.
Bake for 40-45 minutes until a toothpick inserted into the center of the loaf comes out clean.
Enjoy warm with butter or just a room temp slice anytime!
Notes
If you want to make 2 mini loafs instead of one big loaf, separate the mixture between 2 greased mini loaf pans and reduce cooking time to 30-35 minutes.
