I LOVE sour cream. Seriously, I might have a problem, but we can open that up later. Why, you may ask, am I starting out a potato soup post with sour cream? Because, in my experience, I have always blobbed a bunch of sour cream onto the “top” of potato soups in the past just to sadly watch it sink into the watery abyss and seemingly dissolve into nothingness. After so many heartbreaking experiences with potato soup, I set out to right this terrible sour cream tragedy. This soup is like no other potato soup I have ever experienced. It is creamy and delicious while still being able to hold it’s own. The melted cheese, the sour cream, the crispy crumbled bacon. It can all be supported nicely without dying a horrible potato water death!
Obviously, this starts with the potatoes. Peel ’em, wash ’em, chop ’em, throw ’em in a pot! Now comes the important part. Add a cup of water for every cup of chopped potatoes. Put the lid on the pot and heat it over medium heat. Set a timer for 30 minutes, and don’t touch them. Let them just bubble and boil.
When the timer goes off, remove the pot from the heat. Don’t drain any of the remaining water from the pot. Just add your butter, milk, salt, and pepper. Using an immulsion blender, blend your soup to the creamy consistency that you desire. If it’s a bit too thick for your preference, you can always add an extra splash of milk. Just be sure to still keep the consistency on the thicker side to avoid a harrowing sour cream experience.
Serve it up in a bowl with shredded cheese, sour cream, crispy crumbled bacon, and chives if you want! The days of sour cream heartache are over! Enjoy!
The Best Potato Soup You’ve Never Had
Ingredients
- 4 cup potato chopped
- 4 cup water
- 1½ cup milk
- ½ cup butter
- 1½ tsp salt
- ½ tsp pepper
Optional Toppings
- cheese shredded
- sour cream
- bacon cooked crispy and crumbled
- chives
Instructions
- Peel, wash, and chop the potatoes.
- Add chopped potatoes and 4 cups water to a large pot.
- Cover and bring to a boil over medium high heat. Continue to boil for 30 minutes.
- Once the 30 minutes are up, do NOT drain water that is remaining. Add milk, butter, salt, and pepper.
- Using an emulsion blender (like this one), blend the soup into creamy deliciousness.
- Spoon into a bowl and top with your favorite toppings and devour!
