I love shish-kebabs, but I hate the mundane prepping of the ingredients and then painstakingly skewering them onto wooden sticks in some sort of “organized” fashion. So what is the answer to this issue? Pizza. Prep the ingredients, throw it all on top of a pizza crust at once, cook it, and then devour it. No more monotony!!
For shish-kebabs, the first thing you need is meat. I typically like to use pork, so that’s what I used for this pizza rendition. I had originally planned to fry some pork chops, but decided last minute to use them for pizza instead! Chop up the pork chops and toss them in a cast iron skillet with a dash of oil, salt, and pepper. Brown them nicely and then stir in the soy sauce and apricot preserves. Mix well and remove from heat.
In another skillet, saute the sliced peppers and red onions in a dash of oil, salt, and pepper until they start to soften.
Next, roll out your pizza dough and place it on a floured pizza pan. Now, we are ready to assemble. Start by taking the meat out of the skillet and using the remaining “sauce” liquid as the base of the pizza. Spread it around evenly and then top with mozzarella cheese. Next up are the veggies and the meat. Don’t skimp on that meat or the red onion-use it all!
Bake in a preheated oven or smoker at 450 for 12-15 minutes. Slice it up and enjoy! This is one of my family’s top favorite pizzas!
Shish-Kebab Pizza
Ingredients
- 1 pizza dough crust
- 1 cup chopped pork chop
- ½ cup apricot preserves
- 1¼ Tbsp soy sauce
- ½ red onion sliced
- 1 red bell pepper sliced
- ½ yellow bell pepper sliced
- ½ orange bell pepper sliced
- mozzarella cheese shredded
Instructions
- For this recipe, you will need pizza dough spread out over a floured pizza cooking tray. Try my recipe for Perfect Pizza Dough which makes 2 pizzas worth of dough!
- Cook the diced pork in a skillet with a dash of oil, salt, and pepper. Add soy sauce and apricot preserves and stir well. Remove the pork to a bowl and use the remaining sauce as the base for the pizza.
- While the pork is cooking, in a separate skillet, saute the sliced onions and peppers with a dash of salt and pepper until they are softened.
To Assemble:
- Once the dough is spread out over the floured pizza tray, spread some of the excess apricot preserves sauce all over, leaving a small rim of dough untouched for the crust.
- Add as much shredded mozzarella as you desire, then spread around the pork over the cheese.
- Next, add the onions and peppers.
To Cook:
- Option 1: My favorite option. Prep/Turn on a smoker to 450° and smoke the pizza for 10-15 minutes until the cheese is melted and starting to brown, and the crust is crisp and golden.
- Option 2: Bake in a preheated oven at 450° for 10-15 minutes until cooked to the specifications in option 1. (my oven's sweet spot seems to be around 12 minutes).
