I know I’ve said it before, but I fail miserably at keto. I simply love bread and potatoes too much. Mashed potatoes are one of my favorite forms of potato. I mean, not only are they a delicious side dish to pretty much anything, they can also be loaded up with delicious things, smothered in delicious gravies, or they can even be put into main dishes as an element, like inside pastries and pies. Mashed potatoes are deliciously versatile, and they never go to waste in our house.
That being said, I HATE mashed potatoes that have the potato skins mixed in. Bleh. So, start by PEELING the potatoes. Then, wash them because we don’t want to eat something that tastes like dirt at the end of the day. Chop them up, throw them in a pot, and cover them with water. Boil them for 20 minutes, and then drain them.
Toss them in a bowl and add butter, milk, salt, and pepper. Mix it all up with a hand mixer until you have nice, thick, creamy mashed potato ready to be plated for eating or using as an element in a main dish.
Side note:
Some people also add sour cream, cheese, and chives to their mashed potato mixture, mixing all the flavors in together. I personally prefer not to do this. I enjoy my toppings on TOP of my mashed potatoes – flavors easily distinguished from each other. This also allows the mashed potatoes to keep their versatility. Once you’ve added all those things into it, it really only has the one taste and one use.

Perfect Mashed Potatoes
Ingredients
- 4 LARGE potatoes
- 1/4 cup milk
- 6-8 Tbsp butter
- 1 tsp salt more to taste optional
- 1/4 tsp pepper more to taste optional
Instructions
- Peel, wash, and then chop up potatoes.
- Place all the potatoes in a large pan and cover with water.
- Cover, bring to a boil over medium high heat for 20 minutes, or until potatoes are easily pierced by a fork.
- Drain the potatoes and transfer to a large bowl.
- Add the milk, butter, salt, and pepper to the potatoes and mix with a hand mixer until creamy. Add extra salt or pepper as needed after mixing and mix in well.
- Enjoy! This goes well alongside almost any meal!
