Let’s be honest, I’m from the South, so sausage gravy is basically flowing through my veins. It’s easy to make, and I don’t think there’s much of anything that it doesn’t go well with. Biscuits, country fried steak, eggs, hash browns, as pizza sauce….the list goes on and on. That being said, obviously, our family eats a lot of gravy, so making it is just a second nature kind of thing!
All you need for gravy is essentially oil, milk, flour, and seasoning. For this sausage gravy, obviously we are going to add sausage, but you can use bacon, or even chorizo if you so desired. Only your seasoning amounts would need altering per taste for those substitutions.
Start by browning the sausage in a skillet. Once it’s cooked, the grease will need to be drained and reserved. You will use it to start your gravy. If you don’t have enough grease, you can add oil as well to get to the amount you need.
Over medium heat, warm the grease in a medium saucepan and add in your flour. Whisk together for a minute or two to cook the flour. Then, add 3/4 cup milk and whisk briskly to remove all the lumps before adding the rest of the milk.

Continue whisking to prevent clumping or the bottom getting burnt until the gravy begins to thicken. This can take 3-5 minutes. Hang in there! Once it’s started to thicken, remove the pot from the heat and whisk in the salt and pepper (or whatever seasonings you desire) along with the sausage. Your gravy will thicken more and more as it cools. Serve it hot for the best experience. Enjoy!

Homemade Sausage Gravy
Ingredients
- ½ lb mild breakfast sausage
- 4 Tbsp reserved sausage grease or oil
- ½ cup flour
- 2¾ cup milk
- ½ tsp salt
- ¼ tsp ground black pepper
Instructions
- Brown the breakfast sausage in a skillet.
- Drain the sausage grease and measure 4 Tbsp into a medium saucepan. Add oil if needed.
- Heat the grease over medium heat and whisk the flour in and continue to whisk for a minute to cook the flour a bit.
- Add 3/4 cup of the milk to the flour mixture and whisk briskly until all lumps are gone. Then, whisk the rest of the milk in.
- Continue to whisk the gravy over medium heat until it starts to thicken, 3-5 minutes.
- Once the gravy starts to thicken, remove from heat and whisk in the salt, pepper, and sausage. Add more salt and pepper if needed per your taste.
- Enjoy!!
