My dad is a vegetarian. Ok, he’s something that he calls a lacto-ovo-pescatarian, which honestly sounds kinda like a strange religion to me and I can never remember the name unless I ask him. So, to make my life easier, my dad is a vegetarian. Anyway, whenever he comes to visit, I try to make food for him that he can eat (and that I actually don’t mind eating myself as well). This garden pizza was born. All the toppings literally came right out of the garden, and I can honestly say, I really do enjoy this one!
Slice onion and pepper into rings, tomato into discs, and zucchini and squash into long, thin strips. Set aside tomato disks for later. Place veggies (except tomatoes) on a sheet pan. Drizzle with oil, salt, pepper, and garlic powder.
Broil on high for 10 minutes.
Roll out pizza dough and place on a floured pizza pan. Brush the crust with oil and sprinkle garlic powder and Italian seasonings all over the crust. Spread a liberal amount of mozzarella over the pizza, then top with the broiled vegetables and the sliced tomatoes.
Throw that thing in a preheated oven at 450 for 10-15 minutes. For even tastier results, throw it in a smoker, like this one, at 450 for 10-15 minutes! Slice and enjoy! We like our garden pizza like we like our garden vegetables- dipped in ranch!

Ingredients
- 1 pizza dough crust
- dash oil
- Italian seasoning
- garlic powder
- 1 yellow squash
- 1 zucchini
- 1 roma tomato
- 1 small onion
- 1-2 bell peppers any color
- salt
- pepper
- mozzarella

Pizza

- Brush pizza dough with oil. Sprinkle garlic powder and Italian seasonings over the crust.
- Spread a liberal amount of mozzarella over pizza.
- Top with broiled vegetables and tomatoes.
To Cook:
- Option 1: My favorite option. Prep/Turn on a smoker to 450° and smoke the pizza for 10-15 minutes until the cheese is melted and starting to brown, and the crust is crisp and golden and the fries are "crisp" on top.
- Option 2: Bake in a preheated oven at 450° for 10-15 minutes until cooked to the specifications in option 1. (my oven's sweet spot seems to be around 12 minutes). `
- Slice and enjoy! We love dipping ours in ranch…unless you're like my husband, who smothers his.
