Have you ever had a weird hankerin’ for something? When my husband and I got married, I made some sort of grilled apricot chicken. I have NO idea what I put in it, but just the other day, I found myself craving that glaze. I set out to recreate it, but instead of chicken? PORK!! These didn’t turn out like the chicken. They were even better! They were simpler, quicker, and deliciously juicy and tender! Score!
So, this is so simple! First, start out by soaking your skewer sticks in water. Then, prep all your ingredients and make your glaze. Cut up your onions and peppers in decent sized pieces, drain your chunks of pineapple (or cut a pineapple if you prefer fresh), and cut your pork loin into about 1” chunks. Toss all ingredients (separately) in a bit of oil and a dash of salt and pepper. For the glaze, mix the soy sauce and apricot preserves together and set aside.
Now, assemble the kebabs! You can put things on in whatever type of order you want!
Then grill!! Make sure to wait to brush the glaze all over the kebabs until the last 5-10 minutes of cooking, or else you’ll have a sticky mess of a grill. 😬
Once the pork is cooked and the veggies are softened, enjoy!! We love ours served with a bed of buttered rice!

Easy Pork Shish Kebabs
Ingredients
- 1 pork loin
- 1 red onion quartered
- 1 can pineapple chunks drained
- 1 red bell pepper
- 1 yellow bell pepper
- 1-1/2 Tbsp soy sauce
- 1/2 cup Apricot preserves
- salt and pepper to taste
- oil
- 8 skewers
Instructions
- Soak skewers in water.
- Cut pork tenderloin into 1/2" cubes. Toss with a bit of oil, salt, and pepper.
- Prep the onions, drain the pineapple, and cut the bell peppers into large chunks. Place each ingredient into a bowl and toss each with a bit of oil, salt, and pepper.
- In a separate bowl, mix the soy sauce and apricot preserves together and place to the side.
- Start assembling shish kebabs, alternating between all the ingredients to form a pattern.
- Grill on medium high heat, turning every several minutes, until the pork is cooked through and the veggies have become tender, about 15-20 minutes. Brush on soy sauce mixture, coating well, towards the end of cooking (about the last 5 minutes).
- Enjoy! I like to serve these with a bed of rice, either buttered or fried!
