As a mother of 3, I LOVE easy meals that take few ingredients and the least amount of effort to put them together. Enter in Easy Crockpot Italian Beef Sandwiches. Probably the simplest recipe I know. The hardest part about this recipe is putting it on a bun and eating it. Yeah.
First, get your crockpot out and place a chuck roast in. (If you want to use a crockpot liner, do so!)
Next, empty jars of sliced banana peppers over the meat, liquid and all. I use 2 – 16 oz jars in mine. It just needs to be enough to cover the meat with peppers.
Last, cook on low for 6 – 8 hours or until you can easily shred the roast. Shred the meat and mix with the peppers and serve!
We serve our Italian Beef Sandwiches on buns with mozzarella cheese sprinkled on top! MMMMM!! Enjoy!!

Equipment
- Crockpot and crockpot liner if desired
Ingredients
- Chuck roast whatever size you want
- sliced banana peppers and juice enough to cover the meat with peppers
- sandwich buns
- mozzarella cheese shredded
Instructions
- Place meat in crockpot.
- Cover meat with jars of sliced banana peppers, liquid and all. (You can use the spicy ones if you like more of a kick!)
- Cook on low for 6-8 hours or until the meat is easily shredded.
- Shred the meat and mix into the peppers. Serve on buns and top with shredded mozzarella! Enjoy!

I presume that other vegetables can work too? with or without the peppers. (peppers will be going in mine.) I am thinking onions and mushrooms and maybe(????) cream of xxx soup too.

The liquid in the peppers is quite acidic (it helps soften the meat) and can be kind of tart. I think onions would go great, and the mushrooms could be good too as long as you use the correct ones. Not all mushrooms are created equal.
And let me know what you think if you add the cream of xxx soup! I’m curious now and might have to experiment with it myself!
