My husband loves cheese and he enjoys a good beer. When I put the two together, it makes for a very pleased spouse. He will smother burgers in it, dip chips or pretzels in it, douse eggs or potatoes with it – probably even just eat it with a spoon if I’d let him. Needless to say, I have to share this beer cheese recipe to help spread the beer cheese joy.
Beer cheese is essentially a cheesy gravy made with beer. My husband loves dark beer. Most people I know make their beer cheese with light beers, but my husband LOVES for me to make mine with one of his dark beers. You can use whatever beer you enjoy though.
Start by sauteing some minced garlic in melted butter. Then, add flour and cook it for 1-3 minutes, whisking constantly to prevent burning. Then, slowly whisk in the beer so there are no lumps.
Cook over medium high heat until the “beer gravy” starts to thicken, then reduce heat and add the parsley, salt, and pepper.
Time for the shredded cheese! Add it to the gravy and whisk until completely melted and mixed in. It’s ready! Enjoy!

Beer Cheese
Ingredients
- ¼ cup butter
- ¼ cup flour
- 1 tsp minced garlic
- 2 tsp parsley
- ½ tsp salt more to taste
- ¼ tsp black pepper
- 1 beer your favorite
- 8 oz mild cheddar cheese shredded
Instructions
- Melt butter, add minced garlic, and saute over medium heat until the garlic is golden.
- Add flour and cook for 1-3 minutes, stirring constantly to prevent burning.
- Whisk beer into flour mixture and cook over medium high heat until the mixture thickens to a gravy consistency.
- Add parsley, salt, and pepper.
- Add the shredded cheese and whisk until the cheese is completely melted.
- Serve hot and enjoy!
