So, we have moved back into the RV for the time being until we have finished building our house over at Michigan Log Home Build. Last night, we were planning on grilling a rack of lamb, but it was POURING cats and dogs outside. Air fryer to the rescue! This air fryer rack of lamb turned out JUST as good as it would have on the grill. I was not disappointed in the slightest. It was easy to throw together and easy to clean up (a must in the RV).
My rack of lamb came already prepped right from the store, but if yours is not, you will need to cut away the fatty bits from the tips of the bones and remove the silver skin from the bone side of the ribs. Then, score the fat. Cut very shallow lines into the fat side of the rack, making a “lattice”. Be careful to only cut the fat, not the meat underneath it!
Then, it’s time to season! This is super easy! I start on the bone side of the rack and drizzle some oil over it. Then, just sprinkle garlic powder, onion powder, thyme, rosemary, salt, and pepper evenly over the entire side. Turn the rack of lamb over and repeat the process on the fat side. Oil, then the seasonings. Don’t be afraid to add more to this side than the bone side. Done. Place it on the top rack of the air fryer and turn on to cook at 400 for 18-30 minutes (depending on the doneness you prefer).
You will be looking for an internal temp of 120-130 (18-20 mins) for rare or 130-140 (20-25 mins) for medium rare. For rack of lamb, I personally like to go to 145 (medium/medium well) which I have achieved at 27 minutes in the past. Use a meat thermometer to test for the proper internal temperature.
Side note: I love Air Fried Roasted Potatoes with my rack of lamb, so I prep my potatoes while the lamb is cooking and add them on another cooking rack below the lamb in the last 15-20 minutes of cooking.
Very IMPORTANT! Let your lamb rest for 5-10 minutes before cutting it!! Then, slice down in-between the bones and serve your rack of lamb as “lolipops”! Enjoy!

- 1 Rack of Lamb
- oil
- Garlic Powder
- Onion Powder
- Thyme
- Rosemary
- Salt
- Pepper
Instructions
- You will need an air fryer for this recipe. I LOVE my oven type air fryer here in my RV.
- Prep the Rack of Lamb by removing the silver skin from the bone side of the rack and removing the fatty bits around the tips of the bones if the butcher hasn't already done so.
- Score only the fat on the top with a lattice of very shallow cuts, taking care to not cut into the meat.
- Starting on the bone side, drizzle oil over the rack, and then all of the seasonings evenly over the meat.
- Flip the rack over and drizzle oil over the fat side as well. Top with all of the seasonings, sprinkling each over evenly.
- Place the rack of lamb in the air fryer on the top rack, leaving room for any sides you also want to cook and then cook at 400°, fat side facing up, for 18-27 minutes.
- Check internal temp with a meat thermometer to achieve the desired doneness. 120-130 is rare and will take 18-20 minutes. 130-140 is medium rare and will take 20-25 minutes. 145 (my preference) is medium-medium well and will take about 27 minutes or more to reach.
- Let the rack rest 5-10 minutes before slicing between the bones and serving! Enjoy!

Glad you enjoyed it! I don’t know if an entire leg would fit in the air fryer, but it’s worth a shot to try! I’ve only ever done a full leg in the smoker before. I made a rub for the leg though with these same spices, but also shallots, minced garlic, lemon juice, and oil. Massaged it on and then added more during the smoking process. Which is much longer than in the air fryer! I’m adding it to my list of things to try. Thanks for the suggestion!
