To help kick off the Celebration of Pizza week, I’m choosing a very straight forward pizza. I love the combination of BBQ and red onions in pretty much anything, so why not as a pizza? Add yummy grilled chicken, and you’ve got quite a satisfying meal!
So, for pizza or anything pizza like, I always use my Perfect Pizza Dough recipe, which makes 2 medium size, hand-tossed style pizzas.
Once you’ve rolled out your pizza dough and have it on the floured pizza pan, spread your favorite BBQ sauce on! My favorite is Sweet Baby Ray’s Honey BBQ sauce!
Next, saute some chopped chicken with a dash of salt and pepper. (For best results, I recommend cast iron!) If you’d like to also cook up some chopped bacon to top this pizza with, I definitely would approve of that type of decision. 😉
Add the mozzarella cheese, the “optional” bacon (as if it really needs to be an option), and some slices of red onion and you are in business! Throw that thing in a preheated oven at 450 for 10-15 minutes. For even tastier results, throw it in a smoker, like this one, at 450 for 10-15 minutes!
Once the pizza crust is golden and the cheese and toppings are all melty and delicious looking, take it out, cut it up, and enjoy! Can’t promise there will be any leftovers of this one.
BBQ Chicken Pizza

Ingredients
- 1 pizza dough crust
- 1-1½ cups diced chicken
- ½ red onion cut in half slices
- ½ lb cooked and crumbled bacon optional
- Mozzarella cheese shredded
- BBQ Sauce choose your favorite
Instructions
- You will need a pizza dough crust (try my recipe here which makes 2 pizzas worth of dough) spread over a floured pizza cooking tray.
- Cook the diced chicken in a greased skillet with a dash of salt and pepper. If you want bacon, cook it now to crispy perfection and crumble it up on a plate or bowl.
To Assemble:
- After you've gotten your pizza dough spread out on your floured pizza pan, spread your favorite BBQ sauce all over, leaving a small amount of untouched dough around the exterior for the crust.
- Next, add your cooked diced chicken.
- Now, spread as much cheese as your heart desires over the top.
- Last, sprinkle the bacon and sliced onions over the top.
To Cook:
- Option 1: My personal favorite. Prep/turn a smoker on to 450° and cook the pizza for 10-15 minutes until the cheese is melty and browning, and the crust is crisp and golden.
- Option 2: Preheat an oven to 450° and bake 10-15 minutes until cooked as specified in option 1. (My oven's sweet spot seems to be around 12 minutes)
