Bananas are a staple food item at our house. They don’t even have to be put on the grocery list. I automatically buy a bunch of bananas every week on my scheduled grocery run. My girls LOVE bananas for snacks, and typically don’t go a full day without requesting one. Every once in a while though, I do have bananas that turn that ugly black color. No one now wants to eat them. That ever happen to you? Don’t fret! No need to throw them away. They are PERFECT for making banana bread!
My kids love banana bread even more than they like the actual bananas. It’s soft, sweet, and just yummy! And it’s so easy to make. Like I said, those icky black bananas on the counter are perfect, so peel them and toss them in a medium sized bowl. Add in your eggs too. Now, just mash the tar out of them with a hand mixer on high a couple minutes, until you have a creamy paste.
Add in flour, sugar, salt, baking powder, and some baking soda. Then, mix on medium speed until everything is incorporated and you’re in business. Spray a loaf pan with cooking spray and dump the mixture in.
If you want chocolate chips in your bread, throw them on top now and then bake in a preheated oven at 350° for 40-45 minutes or until a toothpick inserted into the middle of the loaf comes out clean.

Easy Banana Bread
Ingredients
- 2-3 medium overripe bananas
- 2 eggs
- 1¼ cup flour
- 1 cup sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- chocolate chips optional
Instructions
- Preheat oven to 350°
- Peel the bananas and put them in a medium sized mixing bowl. Add the eggs.
- Using a hand mixer, mix the bananas and eggs on high speed for a couple minutes into a creamy paste.
- Dump the flour, sugar, baking powder, baking soda, and salt all on top of the banana mixture and then mix on medium speed to combine well.
- Spray a loaf pan with cooking spray and then dump in the banana mixture. If you want chocolate chips on the top, sprinkle them on now.
- Bake for 40-45 minutes until a toothpick inserted into the center of the loaf comes out clean.
- Enjoy warm with butter or just a room temp slice anytime!
