Something that my grandmother had scheduled for breakfast EVERY weekday when I was growing up was biscuits. There was no need to ask what was for breakfast. We all would sit around the table and enjoy our biscuits. Back then, they were always served with butter and jam, which is how I still enjoy them to this day. I never fail to reminisce about making biscuits with my grandmother as I make them in my own kitchen with my own children.
Biscuits are probably the easiest “bread” type thing to make in the entire universe. There’s no yeast, so no need to let the dough rest to rise and let the gluten develop. Flour, sugar, salt, and baking powder is all sifted together and then shortening is crumbed in. After that, you add some milk, and bada-bing bada-boom – the dough is made.
Working the dough is the part that can mess you up. If you overwork it, it doesn’t make nice, puffy, pull apart ready, delicious biscuits. Overworking can lead to hard, flat discs that the dog MIGHT eat.
So, flour a work surface for the dough and plop it all out. It will be quite sticky at this point. Dust the top of the dough with flour and then knead the dough a few times, dusting with a tad more flour as needed. I don’t think I’ve ever exceeded 5-10 “kneads” before it was perfect. It should still be slightly sticky, but able to be pressed out on the counter without sticking to your fingers.
Press your dough out to around 3/8″ thick, and then dip the top of a glass into flour and use it to cut dough circles out. Place the dough circles onto an ungreased cookie sheet and then bring the leftover dough back together and then out to about 3/8″ thick again.
Continue cutting dough circles until you are out of dough. I use a whiskey glass to cut mine out, and it results in about 10 biscuits. If you use a smaller glass, it will make more biscuits.
Bake in a preheated oven at 425 for 13-15 minutes until the biscuits are tall and fluffy. The tops should be a light golden color. Once out of the oven, you can brush them with some salted butter for added yumminess! Enjoy however you like! My kids love the butter and jam option, but my husband prefers them with Sausage Gravy or Chocolate Gravy!
These are perfect for breakfast, as an accompaniment to dinner, or the dough can even be used in things like Chicken ‘n Dumplings. Adding some shredded cheese while mixing and then topping with Garlic Butter when they come out of the oven can result in delicious cheesy garlic biscuits.

Forget-Me-Not Biscuits
Ingredients
- 2 cup flour
- 1 Tbsp baking powder
- 1 tsp salt
- 1 Tbsp sugar
- 1/3 cup shortening
- 1 cup milk
Instructions
- Preheat oven to 425°
- In a medium bowl, mix all the dry ingredients together well.
- Add in the shortening and crumb it together with the flour mixture.
- Add the milk and stir until just combined.
- Flour a workbench and drop out biscuit mixture on it. Sprinkle flour over the dough and then knead a few times, sprinkling more flour as needed, until it is soft and not overly sticky anymore. Don't overwork the dough.
- Lightly flour workbench again and press dough out gently to about 3/8" thick.
- Dip the top of a glass into flour and then cut out dough circles with it. Place the dough circles onto an ungreased cookie sheet.
- Re-form the remainder of the dough and press out flat again. Cut more dough circles out. Repeat until all the dough has been used up. Should be about 10 dough circles total.
- Bake for 13-15 minutes until the biscuits have raised and the tops are light golden.
- You can brush some butter over the tops of these as soon as they come out of the oven if you like! Enjoy!
