I love fried potatoes. I could seriously have them as a side for every meal….or a plate of them by themselves. No judgement. I’m trying to turn over a new healthy leaf, but….PO-TA-TOES! Anyway, I love fried potatoes, but usually have something else cooking in my cast iron skillet. Enter in – the air fryer! It makes these fried tators simple, quick, and healthier too! I can cook the protein and veggies for my meal while the air fryer takes care of my precious potatoes for me.
Wash and chop up the red potatoes into bite sized pieces. Place in a bag or bowl. Honesty moment? I season mine in a gallon storage bag to save on dishes. Anyway, moving on – Drizzle the potatoes with your favorite choice of oil. Sprinkle with just seasoned salt for regular fried potatoes, or mix it up with sea salt, pepper, rosemary, and thyme for Greek style potatoes and mix well.
My air fryer has shelves, so i fill 2 trays with my potatoes and cook it all at the same time. 400 for 15 minutes is perfect. If you have a basket air fryer, you might have to cook your potatoes in batches because to cook properly, the potatoes need to be a flat even layer. Potatoes in a basket fryer may also need to be stirred halfway through. I will never go back to a basket air fryer after having this amazing thing. It is definitely superior.

Air Fryer Roasted Potatoes

- Air fryer
Ingredients
- red potatoes
For Simple Fried Potatoes
- oil
- seasoned salt
Alternate: For Greek Style Potatoes
- oil
- sea salt
- ground black pepper
- thyme
- rosemary
- garlic powder optional
Instructions
- You will need an air fryer for this recipe. I LOVE my oven type air fryer here in my RV.
- Wash and chop up the potatoes. The larger the chunks, the longer they will take to cook. I prefer to cut them on the smaller side (1/4-1/2" pieces) so that I can cook them in 15 mins or less.
- Toss all the potatoes into a gallon ziploc bag and drizzle with oil.
- Then, sprinkle the desired seasonings in to taste. I honestly don't think you can go overboard on these. They are delicious.
- Zip the bag closed and give the potatoes a good shake to evenly coat.
- Fill up the racks of the air fryer with the potatoes. Make sure the potatoes are in an even, flat layer to ensure good cooking.
- Place racks in air fryer and cook on 400° for 10-15 minutes. Longer if needed for bigger quantities/chunks. They are done when a fork cleanly pokes through them and they start to turn golden.
- Side note: If cooking in a bucket air fryer, you might have to cook in batches if you want to cook a bigger quantity. You also might need to give the potatoes a stir halfway through cooking.
